Frequently asked questions
Fan circulation moves hot air around the food more efficiently than still air, so the food cooks faster at any given dial temperature. The universal rule: reduce conventional recipe temperatures by 20°C (or 25°F) when using fan. So a 180°C recipe = 160°C in fan. Cooking time stays similar or drops 10%.
A 0-9 scale used on gas ovens. Each mark = ~14°C. Gas Mark 4 = 180°C (moderate), Gas Mark 7 = 220°C (very hot). Modern UK ovens often display both °C and Gas Mark; older gas-only ovens (and many UAE villas with imported gas appliances) use Gas Mark only.
Mid-20th century recipes pre-date precise thermostats. 'Slow oven' = ~150°C, 'moderate' = 180°C, 'hot' = 220°C. Modern recipes always state numbers. If converting old cookbooks, use the descriptor → temperature mapping in the result.
Most domestic ovens are ±15°C off the dial setting. To check yours: buy a cheap AED 30 oven thermometer, set to 180°C, wait until preheated, read the actual. Calibrate your recipes accordingly. UAE villa ovens with rare use can be especially inaccurate.
Bread (artisan loaves, hearth-style): 220-240°C. Pizza: 240-260°C (or higher with stone/steel). Cake: 160-180°C. Cookies: 170-190°C. Roast meat: 180-220°C depending on cut. Custards / cheesecake / soufflé: 140-160°C (low-and-slow to prevent curdling).
